From Bend's only sour brewery, LaTache is our lightest and most approachable beer. Hops are used only for aromatics (hop-back and dry-hopping) so the beer is balanced with the acidity produced by our proprietary house cultures of yeast and bacteria. Light, bright with notes of citrus.
Brewed with 6 grains grown in Madras at Mecca Grade Estate Malt, we also utilized their sweetgrass hay in the process like old-world brewers. The Cascade hops we used came from Goschie Farms in Silverton and the batch was fermented in a large, open-topped wooden vat at our brewery in the Central Oregon forest. The beer was then aged in 2 large barrels made out of Oregon Oak in McMinnville by Oregon Barrel Works on cherries from the Columbia Valley prior to bottling with Oregon wildflower honey for carbonation. Balanced, vinous with the essence of cherries.
