This IIPA is the culmination of brewing innovation from our Hop Fire program. A combination of two-row and vienna malts provide the color and sweetness to counterbalance the whirlpool additions of new-school hops, Azacca and Strata blended with Centennial (a classic hop). There’s tropical notes of ripe mango and juicy passion fruit mixed with citrus aromas of pomelo, lemon and lime, with hints of pine and strawberry.
This gently tart, golden sour ale was fermented in stainless with A20 citrus from imperial yeast before being inoculated with our house lactobacillus culture. It was then aged for 9 months in Mexican Repesado Tequila Barrels before being thoughtfully blended with ample amounts of Grapefruit and Lime Juice + zest. A dusting of coarse sea salt was then added to round out this Paloma style cocktail sour. Hints of oak compliment delicate tequila notes and gentle acidity and light salinity combine for a complex and refreshing beer that resonates with beer and cocktail lovers alike.
